Corn (maize) flour is very finely ground maize corn (quite different from ‘cornflour’, which is a fine white starch made from corn). This corn flour can be substituted for wheat flour in making breads, confectioneries, breakfast meals and more. It is also great for thickening sauces, gravies, custard and soups and as a breading agent. This fine, light golden flour adds a pleasing texture to baked goods and a smooth consistency to meals and sauces. Great in corn bread and polenta cake!
